At Ballot-Flurin, our organic mead is handmade in our Bee Factory in the Hautes-Pyrénées, using only our finest organic honeys from Gentle Beekeeping® and pure spring water from the Pyrenees — nothing else. This ancestral fermented drink, sometimes called the "drink of the gods", is produced in small batches, cold, with no added sulfites, to reveal the full aromatic richness of the honey.
Our sparkling mead comes in several cuvées, each made from a different single-flower honey, chosen for its unique terroir and aromatic profile. Several of our cuvées have been awarded at recognized competitions, such as the Concours des Miels de France and the Mead Madness Cup, Europe's largest mead competition.
Mead is a fermented drink made from honey and water, one of the oldest alcoholic beverages in the world. At Ballot-Flurin, fermentation happens naturally thanks to indigenous bacteria native to the hive — a unique method that produces a dry mead (less than 25g of residual sugar per liter), with a balanced natural acidity. The result is a lightly sparkling drink at 12% alcohol, gluten-free and with no added sulfites, closer in character to a white wine or a cider than to a traditional, very sweet mead.
Our range of 75cl sparkling mead cuvées offers a variety of aromatic profiles depending on the floral origin of the honey used:
Acacia Cuvée — a soft, floral mead made from acacia honey known for its aromatic finesse, ideal for palates discovering mead for the first time.
Sunflower Cuvée — fermented from a sunflower honey from the Gers region, this honey wine stands out for its vegetal notes balanced by a touch of juicy acidity. It won the gold medal at the Concours des Miels de France 2021 and a bronze medal at the Mead Madness Cup 2023.
Orange Blossom Cuvée — a mead with delicate orange blossom aromas, for a fragrant and refined tasting experience.
Lavender Cuvée — a mead typical of the Pyrenees terroir, with aromatic lavender notes, somewhere between floral sweetness and freshness.
Spring Cuvée and Rhododendron Cuvée — characterful cuvées made from mountain honeys harvested in limited quantities, for curious enthusiasts wanting to discover rarer aromatic profiles.
Our meads are best served chilled, like a white wine, whether as an aperitif or alongside a meal. They pair particularly well with rich or fruity dishes (foie gras, duck breast, melon with Serrano ham), strong cheeses such as sheep's milk blue cheese or a mature Gorgonzola, and desserts like gingerbread or peach melba. Mead also works beautifully in cocktails, such as the classic Bee's Knees.
Unopened, a bottle of mead keeps for several years away from light and heat. Once opened, it should be consumed within 2 to 3 weeks and kept refrigerated.
All our mead cuvées are certified organic, handmade in our workshop in the Hautes-Pyrénées, with no added sulfites and gluten-free. Like all honey-based preparations from our Gentle Beekeeping® approach, mead retains some of honey's properties, notably its richness in antioxidants, while remaining an alcoholic beverage to be enjoyed in moderation. Mead sales are restricted to adults.
