This cuvée has undergone several fermentations, producing alcohol, acidity and natural carbonation. Acacia honey reveals delicate and subtle flavours when fermented dry, with notes of acacia blossom, white wine and, of course, honey, without the heavy sweetness of traditional mead. It is the perfect introduction to mead for those discovering this drink of the gods for the first time.
Batch No. 094-25: 12% alc. vol. – residual sugar at bottling: approximately 15 g/L
Mead categories differ from those of wine and generally contain slightly more sugar. At 25 g/L or less, a mead is considered dry. This style allows the honey’s distinctive notes to express themselves more fully, highlighting the botanical characteristics of the surrounding flora while preserving the character of the honey itself. Our dry meads are balanced by natural acidity provided by bacteria native to the hive, a method unique to our meads.
Perfect as an aperitif or in a spritz (3 parts Acacia Cuvée, 1 part red aperitif such as Campari, served over ice and topped with sparkling water and an orange slice). Pairs beautifully with vegetal and earthy flavours such as carrots and hummus, French onion soup, chicken with mole poblano or mushroom risotto. Excellent with mild cheeses such as fresh goat’s cheese or Tomme de Savoie. Perfect with desserts such as carrot cake or lemon panna cotta.
