Harvested at the end of May on the Pyrenean foothills, this honeydew honey, with its malty, floral flavour, is gathered by bees from wild cherry, chestnut and maple trees found in abundance in this Ariège terroir.
Honeydew is a sticky, very sweet liquid, excreted by parasitic insects such as aphids or scale insects, which pierce the leaves and trunks of certain trees (pines, firs, oaks, birches, chestnut, fruit trees, etc.) to feed on the extracted sap. These sap-sucking insects, often overindulging and with imperfect digestion, end up excreting this sugary substance. This is the origin of the honeydew bees collect.
A method developed through over 40 years of research and hands-on practice, born from a desire to better understand bees and our relationship with them.
In Ariège, by Agathe and François. Other flowers foraged: Bramble, Willow, White Clover
