Our honey is a completely wild product, each one has its own "accent" and its own story. We go to great lengths to produce them in the best possible conditions, ignoring many of the conveniences of modern beekeeping. Harvests are limited, in tune with the natural rhythms of nature. The food of the gods
Humans have consumed honey since the beginning of time. Our ancestors sensed that it contained some kind of essence of nature. This nectar of the gods has always been a source of nourishment and delight. It also has healing properties.
Ballot-Flurin "Grand cru" (Finest Quality) organic honey
At Ballot-Flurin we are small-scale beekeepers and have chosen to pursue the highest possible standards with an uncompromising approach to the quality and naturalness of our products, because we know that this is only way to offer a honey that will satisfy the most demanding palate.
1 – Rare honey collected by an interdependent network of beekeepers
Limited edition: 50 independent beekeepers work together in our local, organic GENTLE Beekeeping network, producing small quantities of honey "like it used to be": 4,000 jars per month (125g and 500g). For each honey, the label specifies the type of flower, the exact location of the beehives and the beekeeper's initials.
2 – The art of producing delicious honey
The purity of our honeys' origin is preserved: they are never blended. Produced on a "monofloral" basis, they come from characteristic micro-regions, that give them their unique authentic taste.
3 – Organic apitherapy quality: the guarantee of healthy energy
Our "Grand Cru" honeys do not just seduce your palate.
The product of local habitats rich in hardy medicinal plants, they also benefit from our expertise in apitherapy: each selected honey offers a wealth of high quality carbohydrates (fructose and glucose), enzymes and bioavailable trace elements.
Our organic honey is an excellent fuel for brief or prolonged physical effort. Used as part of a balanced diet, it can help everyone maintain a healthy level of energy: athletes, kids, people who are very active, the elderly, etc.
Unpasteurized and gently processed, their enzymatic properties are preserved, giving the honeys various beneficial properties depending on the type of flower. For example, lime tree blossom honey has anti-stress properties and can help you to sleep, rosemary honey can soothe fragile stomachs....
4 – A product of the countryside
Authentic honey reflects the true soul of a landscape or region.
Our beehives lie hidden in secret valleys, remote woodland and undisturbed plains, under the benevolent, majestic gaze of the Pyrenees.
These micro-regions are like a miniature natural paradise, far from any pollution, offering an exceptional honey-producing environment with chestnut, lime, rhododendron, heather, acacia, rosemary...
The wealth of plants is reflected in the honey. The bees are happy here: they do not have to fly beyond their natural territorial boundaries to find food in less safe areas. They are not tired and can work more efficiently...
5 – The product of free bees
• Our bees are fed exclusively on their own honey throughout the year and given plant-based or homeopathic treatments.
• Each honey is harvested when it is fully mature at just the right time: the harvest respects the ancient rhythms of the hive and the bees' free will.
• The GENTLE harvesting method does not stress the bees: it is only used for "grand cru" honey and is relatively uncommon, even among organic beekeepers. For example, the highly ingenious bee escape technique encourages the bees to descend from the upper parts of the hive (where the honey is stored) without being able to go back up, the honey harvest can then be carried out without aggressively removing them.
6 – Respect from nature's bounty
We have chosen to preserve our honey's natural richness with an authentic, small-scale approach based on time, patience, and humility:
• Manual uncapping with a knife.
• Unpasteurized honey, not heated above 95°F (35°C) (the hive's natural temperature). Extracted by cold centrifugation. Compulsory filtration and decanting.
• Processing of the honey using the very gentle natural "seeding" technique to avoid crushing the crystals by mechanical methods.
• Placed in jars by hand on site in the honey house.
7 – Consideration of subtle cosmic and vibrational rhythms
We harvest our honey respecting the solar cycles and the moods of the bees. Each honey is energized increasing its richness in active ingredients, and also its vitality and vibrational information. respectant les humeurs des abeilles.
